Waltham Butternut is a versatile peaNUT-shaped Squash variety with tasty orange flesh. This vine is a reliable grower and keeps well, but you do need a bit of space for it to grow wide.

Culinary Uses for Waltham Butternut Squash
Waltham Butternut Squash is a versatile ingredient. Its sweetness makes it a lovely addition to curries and roast vegetable salads. We also love it in a hearty winter soup, or as a tortellini filling. If you are on the lookout for vegetable laden recipes that the kids will love, try this trick: Roast and puree your Butternut Squash, then add it to cheese sauce for a healthy macaroni cheese. For those with a sweet tooth, try pumpkin and cinnamon muffins topped with cream cheese icing.
Butternut Squash take a long time (about 3 months) to ripen. If you pick them too early, the flesh will be hard and flavourless. Harvest in autumn when their skin has hardened, the skin is a uniform tan colour, and the stalk has turned brown. When harvesting, leave a 3 - 5 cm stem on the Squash. Harvest one at a time, leaving the rest to continue ripening, but make sure you pick them before the first frost.
Growing Conditions - Waltham Butternut Squash
Butternut Squash thrive in full sun and rich soil that is high in organic matter like compost. They need lots of space to spread out, as the vine has a spreading habit. (Once you have a few baby Squash on your vine, nip it at the tips to concentrate growth into the vegetable, not the foliage.) Companion plant Butternuts with Beans, Borage, Catnip, Radish, Marigold, or Nasturtiums, but avoid planting near Potatoes.
Butternut Squash plants need to be sheltered from the wind but will survive a light frost or a mild drought once established. They do best if regularly fed and watered during the growing season. (Water at the base to avoid splashing the leaves with water, as this can encourage mildew.)
Climate and seasonal information
Plant Butternuts in late spring for an autumn harvest. Butternut pumpkins prefer a warm climate. They will grow in most parts of New Zealand if planted in spring or early summer.
